Eden Mill New Make Spirit - 50cl gin Mixed with tonicStraight from the stills at 63. 5% ABV, our New Make Spirit is the pre cursor to our Single Malt before the oak casks, before the ageing process, before it's a Scotch Whisky. The flavour profile is intentionally grassy, fruity and floral owing to our carefully curated distillation process. We use local Fife Laureate barley, M type yeast, and a 72 hour fermentation. Our wash still is onion shaped, and our spirit still has a boil ball the former
